firebase - Should I store my restaurant data in a local variable?

Question

I am building a restaurant app and I just need to know if I should save my restaurant data locally in a variable on app while retrieving the data from firebase. Because I can’t figure out a way to save the data in a variable when I use streambuilder.

Any help would be appreciated! Thanks

Also, is it advisable to store order info under “users” collection or make an independent collection on my firestore
